Ugh. You guys…
These really are the best banana muffins I’ve ever had. They’re simple, moist, buttery, banana-y and have a sweet crunchy top. They have never lasted more than a day in hour house because they’re gobbled up so quickly.
The Best Banana Muffin Recipe
Ingredients
- 3 ripe bananas
- 1 cup white granulated sugar
- 1 large egg
- 1/4 cup melted butter
- 1 1/2 cups all purpose flour
- 1 teaspoon salt
- turbinado sugar to top (sugar in the raw)
Directions
- Preheat oven to 350 F
- Line muffin tin
- Peel then mash the bananas with a fork. *I leave a few larger chunks in mine. They make sweet gooey pockets in the muffins*
- Add in melted butter, egg and sugar. Mix together until it looks evenly incorporated.
- In a separate bowl, whisk dry ingredients together
- Add the dry mixture to the banana mixture. *DO NOT OVERMIX*
- Fill muffin tins almost all the way
- Top each with 1/2 teaspoon of turbinado sugar (it will seem like too much but it’s not)
- Bake for 25 minutes
