I have this “friend” that loves desserts. She bakes all the time and ends up giving away most of the fruits (or cookies ha!) of her labor because the batches are too big. Sometimes I just want to make a few cookies for myself without baking 2 dozen treats -er I mean my “friend”. I feel like Jill Snyder’s new book was written for me my friend. It’s 175 Small Batch Baking Recipes and it’s fabulous.
Here is a recipe from the book that I was given permission to publish.
Pink Coconut Dessert Squares
Ingredients
Crust
- 3/4 c graham cracker crumbs
- 2 T packed brown sugar
- 1 1/2 T flour
- 1/4 c melted butter
Filling
- 2/3 c (1/2 can) of sweetened condensed milk
- 1 cup shredded coconut
Frosting
- 1/4 c softened butter
- 1 c powdered sugar
- 1 t milk
- 1-2 drops red food coloring
Directions
Preheat oven to 350 F. I actually baked this in my toaster oven! Combine crust ingredients together and press into a greased loaf pan (9’x5″). Bake 9-12 minutes or until firm. Allow to cool for about 10 minutes.
Combine condensed milk & coconut. Spread evenly on crust. Return to oven for about 20 minutes. Let cool completely.
Beat butter until smooth. Gradually add in sugar and milk. When it’s nice & smooth, add a few drops of food coloring. Mix then frost. Slice into bars 🙂
