It’s all about the drizzle my nizzle. When it comes to coconut butter, you gots ta drizzle when it’s hawt.
Yes guys, it’s one of those days where Mindy is in rare form.
I know what you’re thinking. How does this girl go from a post like Cadbury Egg Cookie Dough Dip to a super healthy one like this?! Because I am a weirdo that’s why. And because I have a bizarre obsession with coconut. And because I think ALL food should taste good whether it is healthy or splurge-worthy. Life is about a healthy balance. This is a recipe that is protein packed yet decadent. It’s easy enough to whip up before work and these waffles are great to pack for a mid-morning snack. Oh yeah, and they taste AH- MAZE.
That doesn’t look like “diet food” to me. It doesn’t taste like it either. Do yourself a favor and pick up some protein powder. Not Walmart brand, like a decent one. It’s worth the extra money. I use BSN Lean Dessert. It seems to cook really well without getting crumbly and dry like some others I’ve tried. Plus the flavors are delicious (whipped vanilla icecream or cinnamon roll are some of my favorites). This recipe is adapted from a friend (who happens to be a figure athlete) I met on a fitness forum about 7 years ago (Check out her Instagram @GeniesJourney).
Ingredients
For waffles:
2 Egg large whites
2 tablespoons skim milk (or any milk you like)
1 scoop protein powder (I love BSN Lean Dessert)
1/4 teaspoon vanilla extract
A sprinkle of cinnamon
Non-stick spray for waffle iron
Coconut Butter Drizzle (Foe Shizzle)
1 Tablespoon coconut butter (learn how to make your own by clicking here)
1/2 teaspoon light agave nectar or 1/2 packet Splenda
To make the waffles, mix all ingredients well. I use a mini blender (Magic Bullet). Spray some Pam on the iron and pour on the batter. Don’t overcook these. It will compromise the texture.
To make the icing, melt the coconut butter in the microwave and stir in your sweetener.
Go ahead and drizzle that.
