Being a full time working mother doesn’t really leave room for dinners that take a ton of time to prep when there are so many other things to do like Instagramming baby photos . This is why I have a relationship with my crock pot.
Tuesday night dinner has become an event at casa FSL. My husband’s BFF and his parents usually come for dinner. The BFF usually brings wine, so I consider this my fancy dinner. Sometimes my sister-in-law and the kids come by. We pull in a decent supper crowd.
Coincidentally, I have a horrendous work schedule on Tuesdays. Most times cooking is my outlet and I enjoy every second of it. Sometimes I don’t feel like cooking at all. This week was one of those days.
I pinned this recipe, made it for Tuesday night’s festivities and served it over garlic mashed potatoes…
