First off, I’d like to say that I hate meatloaf. The whole idea of making a loaf (which I associate with bread) out of any kind of meat makes me wanna gag. Bleh. Having said that, I am about to post a recipe for meatloaf 😛 . Most guys I know like meatloaf, including my husband. I have never made the meal. I never make food that I don’t like. How am I supposed to know if it is seasoned right or even if it came out the way it was supposed to? This month, I cracked open my Cooking Light Magazine. Staring me right in the face, was this recipe for meatloaf. I checked the ingredient list and decided that I liked all of the ingredients. The selling point to this food was that there are chunks of melty cheese throughout the meatloaf. Hmmm… how bad could it be? It sounded like a cheeseburger shaped differently. Since all of the recipes I have tried out from this magazine have turned out delicious, I figured if there was ever a meatloaf recipe I could get behind, it was this one. I made it, ate it, lived to tell about it, and dare I say it…I liked it!
This is a recipe for meatloaf for people that hate meatloaf. It is lightly adapted from Cooking Light Magazine. Click here to see the original recipe. I omitted a few ingredients simply because I didn’t have them.

Ingredients
- 1 ounce panko breadcrumbs (about 1/2 cup)
- Cooking spray
- 1 cup chopped onion
- 2 garlic cloves, chopped
- 1/2 cup ketchup, divided
- 1/4 cup chopped fresh parsley
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon spicy mustard
- 1 tablespoon Dijon mustard
- 3/4 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 ounces white cheddar cheese, diced
- 1 1/2 pounds ground sirloin
- 1 large egg, lightly beaten
Pre heat oven to 425 F.
Heat a skillet over medium-high heat. Add breadcrumbs; cook 3 minutes or until toasted, stirring frequently.
While breadcrumbs cook, heat a large skillet over medium-high heat. Coat pan with cooking spray. Add onion and garlic; sauté 3 minutes.
Combine onion mixture, breadcrumbs, 1/4 cup ketchup, and remaining ingredients. Press into loaf pan coated with cooking spray; spread ketchup over the top.
Bake at 425° for 1 hour 10 minutes or until done.
