Confession: I love chips. All chips. Potato chips, tortilla chips, pickle chips, pita chips, you get the idea. If they come in chip form, I love em. No chips I like are actually healthy. Until I tried kale chips. They are good for you! I had them at a vegetarian restaurant and added kale chips on to my list of chip lust. (bonus points if you tally up how many times the word chip pops up in this post)
They’re a good dinner pre-game chip 😉 They are veggies in disguise.
Get off your couch, hop in the car, zoom to the grocery store, and pick up some curly kale. Yes. Curly. I don’t know how else to describe it. I cheated and bought the pre-washed bagged kind. Throw some kale on a baking sheet.
Drizzle with extra virgin olive oil. Or if your supercool, spritz them with the olive oil.
Sprinkle them with sea salt and if you’re feeling feisty, some cumin for some smokiness and crushed red pepper flakes to add a little caliente! You can even add grated cheese for some Jersey Shore action!
Bake these babies in an oven heated to 375 F for 13 minutes or until the just start browning at the edged. If these overcook, they are not enjoyable. So keep the eagle eye out.
Throw them on a plate, and start crunching away guilt-free!

They scared me too! Until I went to a restaurant and my friend ordered them as an appetizer. I figured, no comittment right?! So I tried, and now, I’m on the kale wagon.
