I know I’m late to the party, but I just got an air fryer last week. I have been using it daily and am just as obsessed as it seems everyone else is. I mean how can you not love something that basically removes all of the added oil and fat (and calories) from frying food?!
I made these buffalo chicken sandwiches last night for dinner and I swear, it was the first time in a very long time that both of my kids ate all of their meals. This is a rare occasion because Dante refuses to eat his dinner unless it’s pasta *rolls eyes*. I made both of my kids’ sandwiches without the buffalo sauce and they had plain crispy chicken. If you decide to do the plain crispy chicken version, it’s fantastic with barbecue sauce or even Chick-Fil-A sauce. My husband and I are huge buffalo wing fans so this recipe was a no brainer.
Using chicken thighs rather than breast meat, these sandwiches are very moist and juicy. Thighs are really the perfect size for a bun.

Cook Time: about 25 minutes
Calories: 300 per sandwich
Ingredients
- 4 boneless skinless chicken thighs fat trimmed (about 1 pound)
- 1/2 cup flour
- 1/2 t garlic powder
- 1/2 t onion powder
- 1 t paprika
- 1/4 t salt
- 1/4 t black pepper
- 2 eggs
- 1 cup panko breadcrumbs
- buffalo sauce
- blue cheese dressing or crumbles (ranch would work too!)
- 4 hamburger buns
Directions
- Preheat air fryer to 375 F
- Set up three shallow dishes: In bowl 1, mix flour with the spices. In bowl 2, whisk eggs. In bowl 3, breadcrumbs.
- Coat chicken on all sides, then dip in the egg bowl to coat. Lastly, dredge the chicken in breadcrumbs and press down until it is fully coated. Repeat the process with all of the chicken.
- Add prepared chicken to air fryer basket and spray lightly with cooking oil. Cook for 15 minutes, flip the chicken and cook for another 10-15 minutes or until the internal temperature reaches 165 degrees F. Cooking time will depend on your individual air fryer.
- Place chicken on a bun, drizzle with buffalo sauce, add blue cheese dressing or crumbles and some lettuce
- Enjoy!
