You guys.
When I tell you that I could eat this every day for breakfast, I truly would. Think coconut cake with cream cheese frosting vibes.
Except healthy.
And packed with lean protein.
Because I have to be in work by 7:00am, I have to choose between making myself look presentable and eating a hot breakfast. Obviously waking up earlier is out of the question for me since trying to drag myself out of be when it’s dark out is what makes me late. Overnight oats are so perfect for people like me that are forever late and rushing out the door in the morning. There is virtually no prep. Just throw the ingredients into a container, shake, go to bed, then toss the container in my work bag and race out the door.

Coconut Protein Overnight Oats
Ingredients
one serving
- 1/2 cup old fashioned oats
- 1 scoop vanilla protein powder
- 1 teaspoon sweetener of your choice (I use unrefined coconut sugar or agave nectar)
- pinch of salt
- 2 tablespoons unsweetened shredded coconut
- 1/4 coconut extract (vanilla or almond would be delish too)
- 1/2 cup milk (I like unsweetened almond)
- 1/4 cup greek yogurt (I used coconut vanilla flavored but pineapple would be amazing)
Directions
Put ingredients in a bowl with a lid or a mason jar. Shake. Place in fridge overnight then eat in the morning.
