I don’t know about you, but I am a busy betch. I feel like there’s always something. Anthony and I have two very big Italian families which usually entails one get together a week. Whether it’s a birthday, a graduation, a baptism, whatever. When we had just Max (my 5 year old), I still managed to have my act together for baking adventures. Before Hurricane Dante hit our house (if you’re a new here, that’s my two year old, not an actual natural disaster), I was known for whipping up delicious desserts from scratch for these family functions. My cousin’s 40th was this past Saturday so I made Kris Jenner’s lemon cake for the party and I literally didn’t even get a piece because it was GONE.
These days, I’ll take a shortcut where I can find one. A few weeks ago, I was listening to my favorite podcast (The Skinny Confidential His & Her Podcast –HIGHLY recommend). The host Lauryn was talking about how delicious this cake was and then mentioned that it’s basically a box cake mix that’s jazzed up with a few extra ingredients.

Apparently Kris Jenner stole this from the Duncan Hines site so I’m posting it here. I adapted it the teeniest bit.
KRIS JENNER’S FAMOUS LEMON CAKE
+ Makes 12-16 servings
♡ 1 package DUNCAN HINES SIGNATURE DELICIOUSLY MOIST LEMON SUPREME CAKE MIX
♡ 1 package lemon instant pudding Mix ( 4 serving size )
♡ 1/2 cup vegetable oil
♡ 1 cup water
♡ 4 eggs
+++ GLAZE: blend 1 cup powered sugar with the juice of 2 lemons
+ directions: Preheat oven to 350 degrees. Blend all ingredients in a large bowl; beat at medium speed for 2 minutes. Bake in a greased & floured tube pan, 10″ or fluted at 350 degree for 45-55 minutes, until center springs back when touched lightly. Cool right side up in pan for about 25 minutes, then invert onto serving plate. GLAZE: Poke holes in the cake and then drizzle
