Connecticut was hit with a good amount of snow over the past few days. For those of you just tuning in, I’m a teacher which means snow = no work. I swear teachers get more excited for snow days than the kids. My coworkers and I have a group text that resembles that of future meteorologists. We had a four day weekend, so this meant pajamas all day, snowman sculpting, skiing and recipe testing.
I’ll get to that in a minute.
We usually get a ton of snow my now, but this year has been unseasonably warm, so when we woke up to this:

Dante is a little too young for skis, but that didn’t stop us from having our own fun!
This was a great weekend for family bonding. Ya know what makes for great bonding? Food. I was brainstorming about fun Valentine’s Day breakfast to make for my sweeties. For birthdays I make funfetti pancakes and they love them. I thought I’d go in the pancake direction but didn’t want to stop at simple heart shaped ones. When in doubt, add Nutella. Or marshmallows. Or both.
Ingredients
- 1 cup all purpose flour
- 3/4 cup milk
- 2 tablespoons melted butter
- 2 tablespoons white vinegar
- 2 tablespoons white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- nonstick spray
- Nutella (a dollop per pancake)
- mini marshmallows (amount depends on how big your pancakes are)
Directions
- combine milk and vinegar in a bowl and set aside for about 5 minutes (this essentially makes buttermilk)
- mix flour, sugar, baking powder, baking soda, and salt in a large mixing bowl
- whisk egg and butter into vinegar and milk mixture
- pour the flour mixture into the wet ingredients and whisk until lumps are gone
- spray pan and pour pancake batter to desired size
- once bubbles form, plop on some Nutella (and marshmallows if you’re making the s’mores variation)
- quickly pour on more pancake batter to cover visible chocolate and/or marshmallows
- when you notice the new batter beginning to set, carefully flip
- cook until golden brown
- enjoy!
(PSSSSST…this recipe can be even easier using store-bought pancake mix )
