I wish you could smell this through your screen.
This recipe changed my thoughts on overnight oatmeal. I’ve heard of it but thought it seemed like a lot of trouble for breakfast. Nonetheless, I was still curious. I’m a slow-cooker fan. Any type of contraption that allows me to toss in a bunch of stuff and a meal comes out eventually, I’m on board. But just in case it was “high maintenance” for a breakfast, I figured it was acceptable to go big for Christmas morning – plus slow cooking apples, brown sugar and cinnamon just sounded like a fantastic idea.
I set out eggnog glazed ricotta cookies (click for recipe) for the big guy, plopped a few ingredients into my crock pot, threw on my jammies and dreamed of breakfast being made for me while I sleep 🙂
When Max woke us up at 6:30 (!) to see if Santa stopped by, our house smelled sooooo cozy! Apple-y, cinnamon-y, sweet and cozy, the perfect winter breakfast.
After we opened gifts and the kids trashed the house, a nice warm bowl of apple cinnamon oatmeal was perfect. The apple chunks were soft but still in tact, the brown sugar cinnamon added the perfect amount of sweetness and warmth but didn’t overwhelm. And best of all, decidedly un-fussy.
Max Darth Vader approved of this recipe so that was huge at Casa FSL.
Even Dante Jake the Neverland Pirate loved it.

Ingredients
- 2 tablespoons butter
- 4 medium apples peeled and diced
- 2 tablespoons cinnamon
- 3/4 cup brown sugar
- 2 cups old fashioned oats
- 3 cups water
- 1 cup half and half
Directions
- wipe down the sides of the crock with butter (to prevent it from sticking), then cut it up into teeny pieces on the bottom of the pot
- layer the diced apples on top of the butter pieces
- sprinkle brown sugar and cinnamon on the apples
- layer the oats on top
- gently pour the water and half and half on everything
- Do Not Stir!
- cook on low for 8-10 hours
