This recipe should come with a warning label.
You guys, I swear I’ve been trying to be good. But these ridiculous ideas for desserts keep coming to me. When a great idea strikes, you have to just go with it right? Who am I to deny the creative process? So this one came about in a conversation with my sister. For those of you tuning in, my sister Michelle and I were pregnant at the same time (the babies were born just three weeks apart!). Even before pregnancy, we have this ongoing joke where one of us will text the other :
ME: You know how you know you’re a FatKid?
HER: LOL how?
ME: When you sign a petition for Ben & Jerry’s to
resurrect a discontinued ice cream flavor.
HER: Oh wow. You need an intervention
ME: I’m serious. How could they do this to me?!
HER: You’re crazy………..what flavor?
This is an actual text. And the truth is I felt like Ben and Jerry teamed up to personally attack me and my baby. And yes, I really did sign a petition to bring back Oatmeal Cookie Chunk. Not one of my finest moments.
I was laughing to myself while remembering this very text when it hit me. I’m going to figure out a way to have this flavor again. Cut to seven months later, and let me tell you guys, revenge tastes sweet. I have discovered a copycat recipe for this flavor! I know what you’re thinking…
Anyway, here’s the recipe.
Ingredients:
- 2 cups heavy cream
- 1 can sweetened condensed milk
- 2 rows of oatmeal cookies (about a cup or a cup & a half)
- 1.5 teaspoons vanilla extract
- 1 tablespoon ground cinnamon
Directions:
- Beat the cream with a whisk attachment until stiff peaks form
- In a separate bowl crush up the cookies leaving a few good size chunks
- Stir condensed milk,vanilla and cinnamon into the crumbs until combined
- Gently fold crumb mixture into the whipped cream
- Pour into a loaf pan and freeze for at least eight hours
I use a disposable foil loaf pan. No dishwashing for this lazy mama. Ain’t nobody got time fo dat.
Take that Ben & Jerry. Take that. Come to mama…
