There are things in life that almost all people love. Puppies, sunsets, pizza and brownies are a few that come to mind. But like most topics of today, there are always two sides claiming that their way is best. I have found there there is a divide among brownie lovers. Those that like a more dry, cake-like brownie. And then there are those that know how to eat a brownie correctly. The moist fudgey brownie lovers.
If you’re anything like me, you make enough brownies in one batch to feed a small country. If brownies are left uncovered overnight, they harden. In my house, I leave the plate of goodies on the counter. Occasionally I will notice that the last person to steal a brownie doesn’t cover them back up. A plate of hard brownies is no bueno.
I have discovered a secret trick to combat this issue. Mini marshmallows. Now before you judge, let me explain. I am not a marshmallow lover. I mean, I like them in s’mores or in my hot cocoa, but you wouldn’t catch me eating chocolate covered marshmallows or eating an entire package of Peeps. However, mini marshmallows melt into the brownie mixture and make them stay super chewy even when left uncovered for a day or two!
Just add a cup of mini marshmallows to any brownie mix and bake according to the recipe!
