The recipe name is actually longer than the ingredient list. That’s funny to me.
These are the easiest cookies I have ever made. Having said that, I can’t believe these are one of the best cookies I have ever eaten. No really.
I am a coconut freak so I pinned this (from here) a while back and kind of debated whether or not this was a hoax. I had these ingredients in my cabinet so I figured I’d test this out. Like the Pinterest recipe version of that show Myth Busters. That’s not a bad idea for a new blog lol! I bet it’s been done. I’ll Pinterest search it later.
Ingredients:
1 (14 ounce) bag of shredded coconut
1 (14 ounce) can of sweetened condensed milk
chocolate to melt.
Directions:
Heat oven to 350F . Mix coconut & condensed milk until evenly coated. I used a medium cookie scoop to get these onto a parchment lined baking sheet. This dough is crazy gooey. Bake for 20 minutes or until edges turn golden brown. Cool completely! Melt chocolate and dip them. Allow chocolate to harden. Enjoy!
Here’s my “I’ve-eaten-16-of-these-and-I’m-grossing-myself-out-but-still-going-because-they-taste-so-good” look. In gym clothes no less.
These remind me of the same cookies I’d buy as a kid on our yearly trip to Florida and eat half the package before my mom noticed. Crispy on the outside and moist & chewy on the inside.

Do you use sweeten coconut or not 😀

I did, but sweetened condensed milk is very sweet so if you used unsweetened, I think it would still taste great.
