Hormones. They can be a real b*tch, just ask my husband how he feels about my 9 months preggo hormones lately 😉 . They usually make me cranky, short-tempered, and a little ADD. As always though, there is a silver lining on the cloud. My hormones have turned me into a mad scientist in the kitchen.
Occasionally, I think about a certain food and can’t think of anything but that until I have it. Well, the other night, the craving was home-made cookies. These cravings are insanely specific. The cookies HAD to be crispy around the edges and chewy in the middle. Oh yea, and they had to have brown sugar and butter in the mix. *sigh* Hormones.
These cookies are the real deal.
Gradually add in the dry. Taste. You may end up with fewer cookies if you taste this dough. That is your only warning.
Bake until golden brown.
2 cups all-purpose flour (you might need to add more if the dough is too sticky)
1/2 teaspoon baking soda
3/4 cup butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 tablespoon coconut extract
1 egg
1 egg yolk
1 1/2 cups shredded coconut
1 cup white chocolate chips (semi-sweet are also amazing in these cookies) Pre heat the oven to 325
1/2 teaspoon baking soda
3/4 cup butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 tablespoon coconut extract
1 egg
1 egg yolk
1 1/2 cups shredded coconut
1 cup white chocolate chips (semi-sweet are also amazing in these cookies) Pre heat the oven to 325
Cream together brown sugar, white sugar and melted butter until smooth
Add in the extracts, egg and yolk. Mix.
Gradually add in the dry ingredients.
Stir in the chocolate chips and coconut.
Drop dough onto parchment line baking sheets (or greased baking sheets)
Bake for about 12 minutes
