These puppies don’t need much of an introduction. The name says it all. I made 3 whopping plates of these cookies and they were gone in 2 days. Not joking. I don’t know if it’s because everyone likes the nostalgic taste of s’mores or because these cookies stay melty & chewy for days. They’re kind of like a s’more meets a chocolate chip cookie with a rice krispie treat twist.
Pre-heat the oven to 375 F.
Snap the graham cracker sheets in half. Line them closely on a baking sheet.
Grab a bagged chocolate chip cookie mix from your pantry. The original recipe called for a home-made cookie dough. If you want to go all out, go for it! I’m lazy. I’ll use the bag. Empty the mix into a large bowl along with an egg and a stick of softened butter. The experts say to always use unsalted butter when baking, but I always use salted because I like sweet and salty. Plus, I’m weird.

Add in your mini marshmallows. The real recipe called for 1 cup. So I added more. About 1 1/2. I ate most of the bag of only had a handful of mini-marshmallows. I had some regular sized ones, so I cut them into smaller pieces. No minis? No problem.

Scoop out some dough onto each graham square. Sorry for the weird lighting in this shot. Our under the cabinet lighting is like really bad fluorescent. I should show my husband this photo. Maybe it will persuade him into new cabinets and new lighting… and new counter tops 😉
Bake for 5 minutes. Yes, only 5 minutes. When they’re in the oven, break up your chocolate bars into small rectangles.
Take the cookies out of the oven. Gently press a piece of chocolate into the center of each half-baked cookie.
Pop them back into the oven for another 5 to 7 minutes.
Take them out and allow them cool on the baking sheet for at least 15 minutes before transferring to a wire rack. Don’t be alarmed if they all run together. These are more like bars than circular cookies. They won’t look completely cooked at this point. That’s okay. They’ll settle as they cool.
I let mine sit over night on the wire rack because the chocolate was still melty. Yes, I ate 3 while they were still warm. Yes, they were to die for.
What I used:
1 bag of chocolate chip cookie mix
1 stick of softened butter
1 large egg
about 1 1/2 cups of mini marshmallows
1 box of graham crackers
3 full size Hershey bars
What I did:
Pre heat the oven to 375 F.
In a large bowl, mix cookie mix, egg, butter, and marshmallows.
Break full graham crackers in half then line a baking sheet with them (very close to each other).
Drop 1T cookie dough onto each graham square and flatten slightly.
Bake for 5 minutes.
Break Hershey bars into small rectangles.
Remove pan from oven.
Gently press one chocolate rectangle into each cookie.
Bake for 5 more minutes.
Remove pan from oven.
Let cool for 15 minutes before slicing and removing from pan.
Let cookies cool completely (I let them sit over night on a wire rack).
Try to use some self-restraint.

I don’t like smores really (marshmallows–meh) but these look delicious and I’ve loved other cookie versions of smores. I could go for one right now, in fact.
