Almost every Friday night for the past 8 or 9 years, my cousin Jackie and my friend Lindsey get together for “Girl’s Night”. A few years back, this meant anything from a long weekend in Miami to margaritas and queso dip in pajamas. The past couple years however have turned into cupcakes & Twilight movies. Things have really changed in the other aspects of our lives. Marriage and kids put an interesting spin on our crew’s wild Friday night antics. But we are the type of chicks that just roll with it. A great cupcake is a close second to a great margarita -minus the hangover and needing someone to drive you home after last call.
Last Friday night was my night to host. I picked up a few pizzas, whipped up a salad, and Lindsey came through with a bag full of ingredients for pineapple cheesecake. Did I forget to mention that she happens to be pregnant with TWINS!!! It’s still pretty insane to say. So, yeah, pizza, salad, and Twinzie’s dessert. Sweet.
Before we tore into the pizza, we made the pie. I know it’s a “cheesecake” but it looks like a pie to me. It’s super easy if you like an instant gratification kind of dessert 😉
We used:
1 ready-made graham pie crust
1 tub of low fat sour cream (16 ounces)
1 packet of vanilla instant pudding mix (cheesecake flavor would have probably been more appropriate)
1 tub of cool whip (use low fat if you want)
1 can of crushed pineapple
We started off with a ready-made graham pie crust (see?! pie.) Set it aside until your mixture is ready.
Take a tub of sour cream and plop it all in the bowl.
Empty the pudding mix into the bowl too.
Drain pineapple well. Really well. I didn’t and got yelled at by a certain pregnant lady whose name I will not mention.
Mix it all up until well blended. Put this mixture in the pie crust and pop it in the fridge for a little while to firm up while you eat your pizza (s). We left this sucker in for about an hour.
Right before serving, spread on a thick layer of cool whip.
Clearly we were quite excited, because there is no photo of the a delicious slice of this tropical creamy goodness. Nope, we housed this thing before realizing I forgot the picture. You’ll have to imagine it, and take my word on this recipe.

I read this one forever ago and I love pineapple. I had my family over for a last minute dinner and remembered this… I am a fan of pineapple and an ever bigger fan of EASY and this fit the bill perfectly. The only thing I did a little wrong was tea about how you didn’t squeeze enough juice out of the pineapple so I made sure to do that to the extreme and just draining the can in a strainer would have been sufficient. Thanks for the delicious quickie dessert! Keep them coming;)
