Yes. You read that correctly. Last night double chocolate coconut belgian waffles were on the dinner menu at casa FSL.
Chocolate & coconut together rock my socks.

I was inspired to make this recipe by smooshing 2 recipes together. Hollie made chocolate coconut waffles and you already know that I love Genie’s protein waffles! I wanted the flavor of Hollie’s recipe and the protein of Genie’s. This is what I came up with:
I started with 2 egg whites and 2 tablespoons of water. I stirred in a scoop of BSN’s chocolate coconut protein powder. I know I said it a zillion times, but BSN’s Lean Dessert protein cooks better than any other protein powder I’ve tried. You can use chocolate or vanilla flavored powder and it will still end up chocolate because we’re adding cocoa powder. Use what you have already 🙂
Next, I added 1/8 teaspoon of my favorite thing in the kitchen. Coconut extract!
A little bit goes a long way, so go easy!
I like my chocolate like I like my coffee & my muscles…strong! Mix in 1 teaspoon of baking cocoa.
Then, I stirred in 2 heaping tablespoons of shredded coconut 🙂
Oh yeah! Come to mama!
Stir this all together really well. Make sure you get rid of those lumps.
Okay. This is where I get weird. I totally ate like 3 spoonfuls of this batter. It tasted like really good brownie batter and is the same consistency.
The waffle iron should be heated up by now. Be sure to coat it with nonstick spray.
Pour on the batter. This recipe makes 1 giant waffle.
It tastes as good as it looks 🙂
