Lately I’ve been feeling extra inspired to step up my game in the gym. Here’s one of my favorite meals packed with lean protein and loaded with flavor. The best part is, you can prepare it the night before. In fact, it’s better if you prepare it 24 hours before you cook it. This recipe is a tweaked version of the marinated flank steak recipe from the South Beach Diet.
The night before, combine:
2 T extra virgin olive oil (this will tenderize the usually tough meat & make it taste rich)
1/3 cup balsamic vinegar (when this stuff cooks, it carmelizes and gives the steak a tangy sweet flavor)
2 tablespoons oregano
1 small onion chopped
3 garlic cloves minced
a pinch of salt
a generous pinch of fresh coarse black pepper
Now mix, mix mix!
Then, place your 1.5 – 2 lb london broil or flank steak into a large zip close plastic bag.
Pour your marinade into the bag also.
Not the prettiest thing I’ve ever laid eyes on, but you can see all of the flavors that will be working their magic on that steak.
Pop that sucker into the fridge overnight. I take mine out and let it sit on the countertop (in the bag still of course) to warm up for about an hour before I cook it.
Remove the steak from the bag, toss it on the grill for about 8 minutes on each side for a medium center.
**This step is really important**
When you take it off the grill, let it sit on a dish or a cutting board for 5 to 10 minutes. This will seal in all of that delicious juice that you’ve worked on the past 24 hours. If you cut it right away, all of that juice will drizzle out.
I served mine with rice, but if you’re low carbing I’d pair it with asparagus or spinach & shrooms 😛

Meat it’s whats for dinner! No way in hell could I let them sit for 10 minutes though, it would have to get in my belly asap!

Yeah, that’s the hardest part. Letting it sit when I am starving is the longest 7 minutes of my life! LOL! But I”M TELLIN YOU it’s worth it!

It’s really diet friendly too. I love that you can do all of the prep the night before, so all you have to do is pop it in the oven. Let me know how it turns out!
